Banana Coconut Overnight Oats

Steel cut oats are one of my favourite things to eat for breakfast as they are so satisfying and stay with you all morning. However, cooking them from scratch can take a little bit of time, so using an overnight method is really the way to go. You just have to zap them in the microwave for a few minutes in the morning and you’re all set! This recipe has a Caribbean essence to it with the banana/coconut combination which is just delicious. I’ve added chia seeds for and extra nutrition boost but you can omit them if desired.

  • Ingredients
  • 1 cup steel cut oats
  • 1/2 cup chia seeds (optional)
  • 2 cups coconut milk (from a carton, not a can)
  • 1 ripe banana
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 cup coconut flakes
  • 1/2 cup blackberries

Directions

Place the oats and chia seeds in a large jar or tupperware container. Add the coconut milk, stir to combine. Place the banana in a bowl and microwave for 1 minute until very soft. This will really enhance the banana flavor. Mash it and add it to the mixture along with the vanilla and cinnamon. Let the mixture sit overnight and warm in the morning. Top with coconut flakes and berries if desired.
