Chocolate & Coconut Flavored Chia Pudding

Chia seeds are incredibly good for you. They are full of antioxidants, loaded with protein & fiber, and help protect you against heart disease and diabetes. They can be incorporated into your diet in so many ways, but my favorite is by making chia pudding. When the chia seeds sit in liquid, they double in volume and form a jelly like substance similar to tapioca as well as take on the flavor of whatever you put with them. These two chia pudding recipes made with chocolate almond milk & coconut milk, are a hit with adults and kids alike. Once you have the foundation of the recipe, (2 1/2 cups liquid, 1/2 cup chis seeds) you can experiment with your own creations. Cinnamon & Chile power add a sweet heat to the chocolate, while vanilla or fresh fruit purees are a great addition to the coconut.

  • Chocolate pudding
  • 2 1/2 cups chocolate almond milk
  • 1/2 cup chis seeds
  • Shaved chocolate for garnish

  • Coconut pudding
  • 2 1/2 cups coconut milk
  • 1/2 cup chia seeds
  • Flaked coconut for garnish

Directions:

Place the chia seeds and liquid into a container with a tight lid (mason jars work perfectly) and shake vigorously until the seeds are completely enveloped by the liquid. If any stick to the sides of the jar use a spoon to incorporate them. Allow the pudding to sit for a minimum of 2 hours. Serve chilled, alone or with optional garnish.
