This is a quick and easy snack which is light on calories but packed with protein. Roasting the chickpeas really brings out their nutty flavor. I like to eat this snack like popcorn. Just pop them in your mouth.
- 1 540 ml. can of chickpeas
- 1 tablespoon parmesan cheese
- Salt & fresh ground pepper to taste
Drain chickpeas in a colander and set aside. Heat a dry frying pan over medium heat and add the drained chickpeas. Stir them frequently and roast for approx. 5 minutes until they are browned all over. Add salt and plenty of fresh ground pepper. Stir until combined. Remove from heat and sprinkle with parmesan cheese. Toss to coat and serve immediately.
