This smoothie is delicious for breakfast, as a snack or even a dessert. It’s packed with protein thanks to the Greek yogurt & tofu and the addition of graham cracker crumbs on top turns this into a real treat. For this smoothie I like to use fresh strawberries which have been brought to room temperature because their flavor is much stronger than when you use cold or frozen berries. If you like your smoothies extra cold you can add some ice to the mixture.
- 2 cups fresh strawberries, sliced
- 2 cups vanilla Greek Yogurt
- 1 cup banana flavored tofu
- 2 graham crackers, crushed
- 1 cup ice (optional)
Place the graham crackers into a ziplock bag and using a mallet crush them into fine consistency. Place remaining ingredients into a blender and puree until smooth. Serve with a sprinkle of graham cracker crumbs and garnish with additional strawberries if desired.
