Apple Cheddar Muffins with Thyme

These chunky muffins are bursting with flavor. The sweet and savory combination is perfect to satisfy any craving and they are quite filling.  I add flax to this recipe for texture and extra nutrition, but if you like a lighter taste you can omit it. The sharper the cheddar you use, the more intense the flavor. As well, the sweetness of the apple will vary depending on the variety you choose. I’ve made these muffins with green apples and honey crisp. Both are nice in this recipe.

  • Ingredients
  • 1 1/2 cups apples, chopped
  • 3/4 cup cheddar cheese, chopped
  • 1/2 cup milk
  • 1/2 cup apple sauce
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon apple pie spice (or 1/2 tsp cinnamon, 1/2 teaspoon nutmeg)
  • 1/2 cup brown sugar
  • 1 teaspoon dried thyme
  • Pinch of salt
  • 1/2 cup ground flax (optional)

Directions:

Preheat the oven to 375.  Line a muffin pan with papers or grease to prevent sticking. In a large bowl, combine the flour, baking powder, baking soda, apple pie spice, sugar, salt, thyme and flax (if using). Add the milk and apple sauce to the dry ingredients. Mix with a spoon until blended and fold in the apples and cheese. Spoon into the muffin cups and place into the oven. Bake for 20-25 minutes or until a toothpick inserted in the center of each muffin comes out clean.
