Apple Cinnamon Coffee Cake
Apples and cinnamon always compliment each other very well. This coffee cake has no surprises, it’s just a winner all around and is a real crowd pleaser. When you want something sweet but not too heavy, this cake is perfect.
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 red apple, peeled and finely chopped
- Thinly sliced apples for garnish

Preheat the oven to 350 degrees. Grease an 8×8 inch cake pan. In a large bowl combine the flour, baking powder and cinnamon. In a separate bowl cream the brown sugar and butter together until smooth. Add the eggs, vanilla & milk and stir. Add this back to the flour mixture along with the chopped apples and combine everything together until a smooth batter is formed. Pour into the pan. Gently lay apple slices in a flower patter in the center of the cake. Bake for 30-40 minutes or until a toothpick inserted in the middle of the cake comes out clean. Cool completely before cutting into squares.
