Campfire Peach Crisp with Granola

Peaches are so abundant in the summer which makes this recipe so perfect for a warm summer evening spent by the fire. Plus clean up is a breeze which makes everyone happy 🙂 If you are not the camping type this recipe can be done on a barbecue or even in the oven. It’s delicious no matter which method you choose. In this recipe I am using a high protein, high fiber granola for the crisp instead of the traditional flour/oats/sugar/butter combo to up the nutritional value of the recipe.

  • Ingredients:
  • 2 peaches, halved and pitted
  • 1/2 cup high protein granola
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Vanilla frozen yogurt (optional)

directions:

Place four squares of foil approx 8 x 8 onto a work surface. Place a peach with the cut side up onto the center of each one. Top with granola and spices. Fold the foil over top of each and seal the sides securely to make a packet. Using tongs, place the packets onto the grill over medium heat (or if cooking over a campfire, allow the wood to burn down into hot coals) Cook for 15 minutes. The fruit will begin to soften and the juices will mix with the granola. Using the tongs, turn over each packet and cook for an additional 15 minutes. This will begin toasting the granola on the inside. Once they are done cooking, remove each packet and turn over to the original side. Carefully open to allow the steam to escape.  Serve in the foil, topped with frozen yogurt if desired.
