Cheesy Mashed Potatoes

Mashed potatoes are one of those dishes which everyone is familiar with and most people enjoy. They are often used as a vessel for gravy which, although delicious, is a little predictable. The ingredients in this recipe make these potatoes so incredibly rich and creamy, they don’t need any kind of sauce to dress them up. Instead of adding butter to the potatoes, cream cheese adds extra flavor and a velvety texture. To make a lighter version of this dish, you can use fat-free dairy products.
- Ingredients:
- 2 pounds baker potatoes, peeled and cut into cubes
- 250 grams of herb & spice cream cheese
- 1 cup 3% milk
- 1/2 cup grated parmesan cheese
- 1 tablespoon salt
Directions:
Preheat the oven to 400 degrees. Place potatoes in a large pot and cover with water. Add the salt. Place the pot over medium-high heat and bring to a boil. Reduce to medium-low and cook for approx 10 minutes until the potatoes are tender. Drain and return to the pot. Heat the milk in the microwave for 1 minute and add to the potatoes along with the cream cheese. Mash together until smooth. Spoon potatoes into a casserole dish and sprinkle with parmesan cheese. Place into the oven and bake for 10 minutes until browned on top.
