Cinnamon Spiced Waffles
These waffles are perfect to eat on the go as their sweet taste is delicious even without syrup. They have a similar taste to an Eggo waffle with their crispy outside and fluffy inside. You could dress them up with a dusting of icing sugar and additional cinnamon as shown or add fresh fruit. I made these waffles using a silicone waffle mold but you can use a conventional waffle iron as well. I have included instructions for both below.
- Ingredients
- 2 cups flour
- 1/4 cup cinnamon
- 1 tablespoon nutmeg
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 tablespoon baking powder
- Pinch of salt
- 2 cups milk
- 1/2 cup oil (coconut, canola, vegetable)
- 1 teaspoon vanilla extract
- 2 egg whites
- Icing sugar
Directions:
Grease a waffle iron with butter and preheat to a medium-high heat, or if using a waffle mold, grease with butter and preheat the oven to 425 degrees. In a large mixing bowl, combine the flour, sugar, cinnamon, nutmeg, baking powder and salt. Add the milk, oil and vanilla and mix into a smooth batter. In a separate bowl, beat the egg whites until frothy and gently fold into the batter. Pour the mixture into the waffle iron or molds and cook until slightly browned and crispy. 4-5 minutes in the iron, 10-15 minutes in the oven. Remove and serve with a sprinkle of icing sugar and additional cinnamon if desired.
