This simple meal looks very elegant and only takes minutes to prepare. It’s perfect as a light lunch or even a starter, and you can replace the crab with any canned seafood you have on hand. Cocktail shrimp, salmon or tuna are all good options.
- 2 large avocados
- 2 – 6 oz cans of crab meat
- 1/4 cup red pepper, diced
- 1/4 cup onion, diced
- 1/4 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh dill or 1 tsp dried dill
- Salt and pepper to taste
Place the crab into a fine strainer and press out all of the liquid. Place into a bowl and add remaining ingredients. Slice the avocado in half and discard the pit. Place the avocado onto a plate and spoon the crab mixture evenly among the halves. Serve immediately.
