Sorbet desserts are the perfect non-fat summer treat which can be completely customized according to your taste. I love to use bold flavours and colours in sorbets and the dark cherries used in this recipe really shine. Because frozen dark cherries are now readily available you don’t have to wait for summer to enjoy this delicious treat!
- 6 cups frozen cherries
- 1 cup water
- 1 cup icing sugar
- 1 teaspoon vanilla extract
- 1 1/2 tablespoons fresh lemon juice
- Mint leaves for garnish
Place all ingredients except for the mint leaves into a blender and puree until smooth. The mixture should be thick and may take longer to process. Once throughly blended, pour into a large Tupperware container and freeze until set. Roughly 1-2 hours. When ready to serve, spoon the sorbet into individual ramekins and garnish with mint leaves if desired.
