Roasted Fish with Red Pepper and Fennel

Fennel (anise) is a wonderful vegetable to serve with white fish as it gives a nice rich flavor and a little goes a long way. When combined with peppers and onions, this vegetable mellows a bit, but still retains its freshness . I have suggested haddock for this recipe but any white fish will work well.
