Gnocchi with Broccoli & Basil Pesto
Gnocchi is quite possibly one of the easiest things to cook straight out of the package. In less than 5 minutes you can put together a meal to feed a crowd whether it be a casual dinner or a special occasion. For this recipe we are keeping things simple using a prepared pesto but you could also make your own from scratch if you like. To keep things green and healthy I have added some steamed broccoli into the mix and some fresh basil to finish it off.
- 2 – 500 gram packages of gnocchi
- 1 jar basil pesto
- 2 cups broccoli, chopped into bite sized pieces
- 1/2 cup fresh basil, thinly sliced
- 1/2 cup parmasean cheese
Bring a large pot of water to a boil. Add salt if desired and add the two packages on gnocchi. Cook for 2-3 minutes until they start to pop up to the surface. Meanwhile, place the broccoli in a microwave safe container and steam with a 1 tablespoon of water for 3 minutes until tender crisp. Set aside. When the gnocchi is cooked, drain it and return to the pot. Add the pesto and broccoli and combine. Serve warm topped with fresh basil & parmesan cheese.
