Mini Shrimp Tacos

Tacos are a huge favorite in my house and these mini versions are fantastic as they can be served as an appetizer or a light meal. The mango and avocado give them a beautiful fresh flavor which compliments the spicy shrimp perfectly. I also make a BBQ Chicken Taco version and a Mini Beef Taco version of these as well.

    These were so easy to make and were a hit at our mexican dinner party. I used frozen mango and simply had it come to room temp first, which took out any real prep. Our guests loved these and my 4 yr old took one and quickly reached both hands out to grab two more! The plate was empty in no time. Great flavours and super easy!
