Nacho Frittata

Frittatas are a perfect breakfast or brunch option because they are so easy to whip up and can look so impressive in very little time. This version takes all the flavors of the popular appetizer and transforms them into a savory, cheesy dish which is perfect any day of the week. Leftovers reheat in seconds so I always make a little extra for breakfast on the go!

  • Ingredients:
  • Dozen eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • 1 cup chopped tomatoes
  • 1 cup sliced olives
  • 1 teaspoon dehydrated onion
  • 1 teaspoon cayenne pepper
  • Salt & Pepper to taste
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup salsa


Preheat the oven to 400 degrees. Grease an 8 x 8 pan with butter or cooking spray. In a large bowl, combine the eggs and milk and beat until light and frothy, approx 1 minute. Pour into the pan. Add the remaining ingredients except for the cilantro and salsa and stir. Place the frittata into the oven and bake for 20-30 minutes until the middle is set. You can test with a toothpick. The eggs will rise considerably in the oven but then settle once removed. Serve with salsa fresh cilantro.
