Overnight Oats with Blueberries, Almonds & Elderberry Syrup

Overnight oats have been around for years because they are such a great option for busy people on the go. Oats are full of fibre, help control cholesterol levels and keep you feeling full. This recipe takes it up a level as a powerhouse of nutrition which is full of antioxidants, protein & flavonoids thanks to the addition of blueberries, almonds & elderberries. It’s a true winner!

  • Ingredients
  • 1 1/2 cups large flake oats
  • 1 1/2 cups frozen blueberries
  • 1/2 cup Feel Good Elderberry Syrup
  • 1/2 cup raw almond slices
  • 2 cups milk of your choice
  • Honey (optional)


Place the frozen blueberries and the elderberry syrup into a saucepan and cook over medium heat for 5 minutes. Divide the mixture and spoon into 4 glass jars or bowls. Next add the oats and almonds, keeping the layers in tact, and pour the milk overtop of each portion.  Refrigerate overnight. In the morning, place the jar or bowl into the microwave for 1 minute and heat until bubbly. Drizzle with honey if desired.
