Peanut Butter Cheesecake Cups

This decadent cheesecake recipe is smooth and creamy and because you don’t have to bake it, it’s so easy to put together. While it’s not exactly calorie free (and really that would be so boring 😉 it is loaded with protein from the peanut butter and Greek yogurt. The cookie crust and candy topping is pure indulgence and just makes it all look pretty. For this recipe I am using individual serving containers as I find it easier to work with the sticky peanut butter.

  • Ingredients:
  • 2 cups Greek yogurt (vanilla, coconut or plain)
  • 1 cup smooth peanut butter
  • 1/2 cup icing sugar (optional)
  • 2 cups Oreo cookies or Fudgeo cookies, crushed
  • 1 cup Skor candy bar, crumbled

directions:

Combine the yogurt and peanut butter in a large bowl. Taste for sweetness. If you are using natural peanut butter or plain yogurt, you might need to add a little of the icing sugar. If it seems too thick you can thin the mixture with a little water until smooth and creamy. Next place approx 1 tablespoon of the Oreo cookies into each serving dish. Top with a tablespoon of the peanut butter mixture. Repeat the layer. Finish with a teaspoon of the Skor candy and refrigerate until ready to serve.
