The key to making perfect salmon is to under cook it just a little and let it sit for a few minutes before serving. This extra time will finish the cooking on the inside without making it dry on the outside.
Pre-heat oven to 350. Place salmon into a baking dish, cover with foil and bake for approx 10 minutes, checking after 8 to see if the inside of the fish is almost done. It should still be moist. Take fish out and set aside for 2-5 minutes. Place each fillet on a plate and top each with 1/4 cup of sun-dried tomato pesto.
