Savory Baked Potato Style Oats

Oatmeal is usually associated with sweet toppings, but because it’s so versatile, you can top it with almost anything to get the flavor and satisfaction you are looking for. In this recipe, the crisp bacon, smooth cheese and crunchy green onions give it that baked potato flavor with so much more nutrition. You can have it any time of day.   • Ingredients:
  • 3 cups water
  • 1 cup steel-cut oats
  • Pinch of salt
  • 1 cup cooked bacon, crumbled
  • 1 cup shredded cheese of your choice
  • 1/2 cup green onion, sliced
  • Fresh pepper to taste


Bring the water to a boil and add the salt and the oats. Return to a boil and stir. Lower the heat to a simmer and continue to cook, uncovered, for 20 minutes. Stir occasionally until the oats start to pull away from the side. Remove from the heat. Spoon into individual bowls and top with cheese, then place into the microwave and cook for 1 minute until the cheese is melted. Add the bacon and green onions and finish with fresh pepper.
