Sweet Pea & Mint Crostini

These crostini have such a fresh flavor and are lovely to serve as an appetizer or a light lunch. Sweet peas and mint combine beautifully and the smooth ricotta combine with orange essence make these both savory and a little sweet.
- Ingredients
- 1 baguette, sliced
- 2 tablespoons butter
- 1 teaspoon minced garlic
- 2 cups ricotta cheese
- 2 cups frozen peas
- 1 cup mint
- 1/2 cup olive oil
- 1/4 cup fresh orange juice
- Salt & Pepper
- 1 teaspoon orange zest
directions:
Set your oven onto a low broil. Place the baguette slices on a cookie sheet and spread with butter and garlic. Broil for 2-3 minutes on a low rack until golden brown. Remove from the oven and set aside to cool. Place the peas, mint, olive oil, orange juice and salt and pepper into a food processor and pulse until blended but still a little chunky. Taste and adjust the seasoning with additional salt & pepper as needed. Spread the ricotta onto the baguette slices and top with pea mixture. Sprinkle with orange zest.
