Swordfish is a meaty, firm fish which holds together well during cooking, whatever method you choose. In this quick recipe I keep it simple by baking it but you could also grill or fry the fish as well. The lemon chive butter is delicious and goes well with the fish as well as any veggies you have on hand. (Make extra and keep it in the fridge)
- 4 swordfish steaks
- Salt & Pepper to taste
- 1/2 cup butter, softened
- 1/2 cup chives, finely chopped
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon garlic powder
Preheat the oven to 375 degrees. Combine all the ingredients for the lemon chive butter and place into the fridge to chill. Line a pan with foil and place the swordfish on top. Season with salt and pepper. Once the oven is hot, place the fish onto the middle rack and bake for 10 minutes. Turn the oven to broil and cook for another 3-5 minutes so the top of the fish is slightly charred and the fish flakes easily with a fork. Remove from the pan and place onto plates or serving platter. Top each fillet with a tablespoon of the lemon chive butter and serve.
