Tequila Sunrise Fruit Kabobs

I love the flavor of grilled fruit, especially in the summer when it’s fresh and ripe as the grilling brings out the natural sugars of the fruit. This marinade has a subtle flavor which is meant to enhance the fruit flavors without overpowering them and the fresh herbs finish it off nicely. You can use whatever fruit you like but the ones suggested below are great for kabobs. If you are grilling without a skewer, fresh peaches (halved) or plums are nice with the marinade as well.
- 8 cups mixed fruit such as pineapple, cantaloupe, honeydew or watermelon
- 1/2 cup tequila
- 1/2 cup orange juice with pulp
- 1/4 cup grenadine
- 1/4 cup fresh mint or basil, chopped
directions:
If using wooden skewers soak them in water first to prevent scorching. Thread the fruit on the skewers and set aside. Combine the tequila, orange juice and grenadine in a wide shallow pan and place the fruit kabobs into the marinade. Allow to sit for 30 minutes or longer. When you are ready to grill, set the barbecue over medium-low heat. place the kabobs onto the barbecue and cook for approx 5 minute per side until grill marks appear. Baste with the marinade with every turn. When ready to serve, sprinkle the fruit with the mint or basil and serve with remaining marinade if desired.
