Vegetarian Mushroom Tacos

These “meaty” tacos come together in 10 minutes and are a great alternative to the original. They have a delicious fresh flavor, are naturally gluten free and can be made vegan if you omit the cheese. They are filling without being heavy and because they are so simple to put together, they are perfect for lunch or dinner. This recipe uses button mushrooms, but for a deeper flavor try using portabella or crimini mushrooms.
- Ingredients:
- 1 tablespoon olive oil
- 1/4 cup red onion or shallot, diced
- 2 cups mushrooms, sliced
- 1 cup frozen corn
- 1 teaspoon seasoning salt
- 1 teaspoon taco seasoning (see below) *
- 1 cup tomato, diced
- 1 avocado, sliced
- 1/2 cup goat cheese, crumbled
- 1/4 cup cilantro, chopped
- 4 corn tortillas
directions:
Place the olive oil into a pan and place over a medium heat. Add the onion and mushrooms and cook for 5 minutes until the onion is soft and the mushrooms and soft with crispy edges. Add the frozen corn, the seasoning salt and the taco seasoning and continue to cook for another few minutes until the corn is warmed through. Serve on corn tortillas and garnish with tomato, avocado, goat cheese and cilantro.
* To make your own taco seasoning blend together the following:
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon pepper
