Fruity Nutty Grainy Salad

I feel healthier just saying the name of this recipe. It’s packed with protein, fiber and antioxidants and aside from being beautiful to look at, it’s also delicious! You can use almost any grain for this salad and vary the fruits and nuts according to your taste. While this recipe is vegetarian you can add cooked chicken if desired
- Ingredients:
- 1 cup couscous, quinoa or wild rice
- 2 cups vegetable stock
- 1 cup strawberries, sliced
- 1 cup blueberries
- 1 cup mixed fruit (peaches, apples, pears, etc)
- 1/2 cup pecans
- 1/2 cup sliced almonds
- 1/2 cup pumpkin seeds (optional)
- 1 cup cooked chicken, diced (optional)
- Dressing:
- 1 cup Greek yogurt
- 1/2 cup honey
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon poppy seeds
- 1/4 cup mint, chopped
directions:
Combine the dressing and set aside. Place the stock in a medium saucepan and bring to a boil. Cook the grains according to the package directions. Fluff with a fork and and place into a large bowl. Allow to cool in the fridge. Add remaining ingredients and toss with the dressing.
