Mixed Tomato Salad with Basil Vinaigrette
This beautiful salad is perfect in the summer when tomatoes are at their peek. Mixing the colors not only looks good, it also changes the taste and texture as each bite will be varying degrees of sweetness and firmness. There are so many different types of tomatoes available, mix it up with what you have on hand. The basil vinaigrette is perfect for any variety.
- Ingredients
- 8 cups of mixed tomatoes (campari, pear, grape, etc)
- 1 cup red onion, thinly sliced
- 1 cup feta cheese,crumbled
- Basil Vinaigrette:
- 2 tablespoons basil paste or 1 tablespoon fresh basil,finely chopped
- 1 clove garlic, minced
- 1 cup olive oil
- 1/2 cup red wine vinegar
- Salt & Pepper to taste
Directions:
Assemble the dressing first and allow the flavors to blend. Set aside. In a large bowl add the ingredients for the salad and toss with the dressing. I like to serve this salad at room temperature as I find the tomatoes lose some of their taste if they are too cold. Place it on the table 15 minutes prior to your meal and toss again just before serving.
