Pistachio Crusted Salmon

This is an excellent way to prepare salmon as the hearty texture of the fish pairs well with the savory crust. The salmon stays moist inside and the pistachio crust adds crunch to every bite. If you don’t have pistachios on hand, almonds or pecans will also work in this recipe.
- 4 salmon fillets
- 1/2 cup shelled pistachios
- 1/2 cup breadcrumbs
- 1 teaspoon dried oregano
- Salt & Pepper to taste
- 1 tablespoon Dijon mustard
- 1 tablespoon mayonnaise
- 1 tablespoon lemon juice
directions:
Preheat the oven to 400 degrees. Shell pistachios and place nuts into a food processor and grind into a coarse consistency. Alternately, you can place the nuts into a sealed zip-lock bag and crush with a mallet. Place into a bowl and add breadcrumbs, oregano, salt & pepper. In a separate bowl combine the mustard, mayonnaise & lemon juice. Place the salmon into a baking dish and using a spoon, spread the mustard mixture over the salmon fillets. Sprinkle with the pistachio mixture until you have a thick layer on top. Bake for 15 minutes until the fish is flaky on the edges and opaque in the center.
