Rice Pilaf with Almonds & Apricots

I love the versatility of this rice dish as it can be made from scratch or you can use left over rice instead. The combination of the crunchy almonds and chewy dried apricots give this dish incredible texture. For added flavor use broth or stock to cook your rice.

  • Ingredients
  • 1 tablespoon butter
  • 1 cup onion, chopped
  • 1/2 cup sliced almonds
  • 1/2 cup dried apricots, sliced
  • 4 cups water or broth
  • 2 cups long-grain and wild rice
  • 1 teaspoon salt

Directions:

In a large saucepan, melt the butter and saute the onions, almonds and apricots over a medium heat for about 5 minutes until the almonds are lightly browned and the onions are soft. Add the rice and water or broth along with the salt and bring to a boil. Cover and simmer for about 20 minutes until the rice is cooked. Fluff with a fork.
