Skillet Chicken Cordon Bleu

This twist on the classic Chicken Cordon Bleu has the same flavor as the original but it’s all made in one skillet so your prep and cooking time is cut in half. It goes from the stove top to the oven and is all done in less than 1/2 hour.

  • Ingredients
  • 1 tablespoon olive oil or butter
  • 2 cups chicken, sliced
  • 1 cup Old Fashioned Style Ham, chopped
  • Salt & Pepper to taste
  • 1 teaspoon dried thyme
  • 1 cup evaporated milk
  • 3/4 cup Pinot Blanc
  • 4-5 slices Swiss cheese
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese

DIRECTIONS:

Heat the oil or butter over medium heat and saute the chicken and ham for 10 minutes until browned on all sides. Add the thyme, salt and pepper to taste. Meanwhile place your oven on a low broil. When the chicken and harm are done, add the wine and evaporated milk and stir. Cook for a few minutes more until hot and bubbly. Top the skillet mixture with the swiss cheese slices. Combine the parmesan cheese and breadcrumbs together in a bowl and sprinkle over the top. Place into the oven on the middle rack and broil for 3-5 minutes until golden brown.
