Sweet and Spicy Salmon

I frequently make this rub for salmon as it’s got the perfect mixture of sweet and heat and with only 4 ingredients, it couldn’t be easier. You can bake the salmon in the oven or cook it on the grill. If you like a bit more heat, you can increase the chili powder or add a few chili flakes instead. The secret to making perfect salmon is to under cook it just a little and let it sit for a few minutes until you serve it. That fish will continue cooking without drying it out.
- Ingredients:
- 4 salmon fillets or steaks
- 2 tablespoons brown sugar
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 1 teaspoon seasoned salt
Directions:
Preheat the oven to 400 degrees. Place salmon fillets in a baking dish. In a small bowl, combine the spices and sprinkle equally over the fish. Using your fingers, massage into the salmon and refrigerate for 15 minutes. Place salmon into the center of the oven and bake uncovered for 10-12 minutes until fish is flakey in the corners. Remove from the oven. Cover with foil and let stand for 5 minutes. Plate and serve.
