Spicy Tuna Salad with Salsa Fresca and Avocado

Canned tuna is one of those staples which have been in our pantries for years. Classically, tuna salad has been mixed with mayonnaise which transforms this otherwise healthy fish into one laden with fat and calories. This salad retains some creamy texture with the addition of the avocado but it gets a kick from the spicy salsa fresca. If you don’t have time to make your own, you can usually find some good varieties in the deli section of your local supermarket but drain it first before using.
- Ingredients
- 4 cups mixed salad greens
- 1 can of albacore tuna, flaked
- 1 avocado, sliced
- 1 cup salsa fresca (recipe follows)
- 2 tablespoons dressing of your choice
- Fresh Pepper
- Salsa Fresca
- 1 1/2 cups ripe tomatoes, diced
- 1/4 cup red onion, diced
- 1 tablespoon jalapenos, minced
- 1 clove garlic, minced
- juice of two limes
- 2 tablespoons fresh cilantro
- 1 teaspoon sea salt
directions:
Combine ingredients for the salsa fresca in a bowl and allow the flavours to develop while you assemble the rest of the salad. Plate the greens and top with tuna, then the avocado, and finish with a generous portion of the salsa. Top with dressing, fresh pepper and serve.
