Italian Style Meatballs with Peppers and Onions

This recipe is pure comfort food and is very quick to make. I generally use frozen meatballs as the prep time is cut in half, however if you have time, homemade meatballs would be an excellent addition. I am using beef in this dish but turkey or chicken will work well. If you like a spicier sauce, increase the amount of chili flakes, or if you prefer milder, you can eliminate them altogether.
- Ingredients
- 2 pounds of frozen meatballs
- 1 yellow pepper, finely sliced
- 1 green pepper, finely sliced
- 1 large onion, finely sliced
- 2 garlic cloves, minced
- 1 jar Marinara Sauce
- 1 tablespoon Italian seasoning
- 1 tablespoon chili flakes
- Salt and Pepper to taste
- 1/2 cup shredded parmesan cheese
Directions:
Preheat oven to 400 degrees. Place frozen meatballs on a baking sheet and bake for 15 minutes until softened. Meanwhile, in a large skillet over medium heat, add the olive oil, onions and peppers and saute for 10 minutes, stirring, until tender. Add the garlic and seasonings and cook for another 2-3 minutes. When the meatballs and done, add them to the peppers along with the sauce. Stir together and turn the heat down to low. Simmer for five minutes until hot and bubbly. Serve with pasta or rice and finish with fresh parmesan cheese.
