Stuffed French Toast with Bacon & Cheese

This decadent all-in-one breakfast has all your favorites in one bite. The saltiness of the bacon and cheese together with the sweetest of the maple syrup is a delicious contrast which blends together perfectly. For a sharper flavor you can use Swiss cheese or aged cheddar.
- Ingredients
- 4 slices whole wheat bread
- 4 cups bacon
- 2 cups Gouda or Havarti cheese, shredded
- 4 eggs
- 1 cup milk
Directions:
Preheat your oven to 400. Cook the bacon in a pan or microwave until crispy, and once it has cooled, crumble into small pieces. Set aside. In a bowl, combine the milk, eggs, salt and pepper. Grease a large pan with butter or cooking spray and pour a little of the egg mixture on the bottom. Place 4 slices of bread on top of the egg. Press down to absorb. Cover each slice of bread with the bacon and cheese. Top with the remaining slices of bread to form sandwiches. Pour the rest of the egg mixture over top so that it completely covers the bread. Bake for 15 minutes. Remove from the oven and using a spatula, gently flip each sandwich over in the pan. Bake for an additional 10 minutes. Remove from the oven, place the french toast on a cutting board and slice into halves or quarters. Serve with maple syrup.
