Sweet Potato Hash with Sausage and Peppers
This is an excellent breakfast dish on its own or alongside eggs for a heartier meal. You can make it outside using a griddle or foil on your barbecue or cook it in a skillet on the stove. I like a savory, spicy breakfast so I chose to use chorizo sausage but you can use any type to make this meal. Regular potatoes can be substituted as well.
- Ingredients
- 2 tablespoons olive oil
- 2 cups sweet potatoes, diced
- 2 cups chorizo sausage, diced
- 1 cup red peppers, diced
- 1 cup onions, diced
- 1 tablespoon Italian seasoning
- 1 tablespoon seasoning salt
- 1 teaspoon fresh pepper
- 1 teaspoon chili powder
Directions:
Preheat your grill or stove to medium high. In a large bowl, combine all the ingredients and toss to coat. Place into a single layer in the griddle or pan and cook, stirring occasionally, for 20 minutes until the potatoes are tender and the edges of the meat and veggies are a little crispy. Spoon onto a serving platter and serve hot.
