Summer Salad with Chicken and Grilled Peaches in a Honey Yogurt Dressing

Peaches are the quintessential summer fruit. Their sweet flavor and soft texture are delicious on their own, but when you lightly grill the fruit, the flesh becomes even juicier, the flavor deeper, and takes them to a whole new level. You want to choose peaches which are ripe, but not mushy. If they are too soft they will fall apart on the grill. In this salad, they are paired with barbecued chicken, crunchy almonds and a smooth honey yogurt dressing.

  • Ingredients
  • 2 medium sized chicken breasts
  • 1/2 cup barbecue sauce
  • 1/4 cup canned diced peaches, pureed
  • 1/4 cup olive oil for brushing on the grill
  • 2 peaches, sliced into wedges
  • 8 cups mixed lettuce leaves
  • 1 cup bell pepper, sliced
  • 1 cup almonds, sliced
  • Honey Yogurt Dressing
  • 1 cup Greek yogurt
  • 1/2 cup liquid honey
  • 1/4 cup lemon juice

Directions:

Preheat the grill to med-high. Combine the barbecue sauce with the pureed peaches. Brush the chicken on both sides with barbecue sauce and allow to marinate while you assemble the salad. Combine the ingredients for the dressing and set aside. When the grill is hot, brush with a little oil to prevent sticking and place the chicken breasts on the grill. Cook for 5 minutes and turn over. Cook for an additional 5-8 minutes or until the meat is no longer pink inside. Meanwhile, place the peach slices on the grill and cook them, turning every 2 minutes, until slightly charred on all sides. Remove the chicken and slice into strips. Place it along with the peaches onto the salad. Top with almonds, drizzle with dressing and serve.
