Pita with Falafel & Fresh Tzatziki
This sandwich is so filling, has great flavor and is packed with protein. Falafels are somewhat time consuming to make, so I usually buy them already prepared from the grocery store in the deli or freezer sections. However I do enjoy making my own sauces for this sandwich. The Lemon Hummus recipe can be found here and I have included a recipe for fresh Tzatziki below.
- Ingredients
- Sandwich:
- 2 cups prepared falafels
- 4 pita or naan bread
- 1 cup hummus
- 1 cup lettuce leaves
- 1 cup pickles, sliced
- 1 cup hot pepper rings
- 1/2 cup red onion, sliced
- Tzatziki:
- 1 cup Greek yogurt
- 1 English cucumber, grated
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 1 tablespoon mint, chopped
- 1 tablespoon lemon juice
- Salt & Pepper to taste
Directions:
Mix the ingredients for the tzatziki and set aside. Warm the falafels in the microwave for a few minutes until hot. Keep warm while you assemble the sandwiches. Next warm the pita or naan for 1 minute. Place onto a cutting board and spread a layer of hummus on the bottom of each. Top with lettuce, onions, pickles and hot peppers. Place 3 or 4 falafels into each sandwich and top with tzatziki. Fold up the sides to form a sandwich and serve.
