Candy Cane Beet Salad with Blue Cheese & Walnuts

Candy cane beets have such a beautiful appearance, I love using them when I’m entertaining in simple dishes that appear fancy, but are easy to create. Unfortunately when you cook the beets, the color fades, so using them in salads is a great way to showcase their unique color. For this salad, I have paired them with spinach which provides a nice base, but any greens will do. The addition of the blue cheese and walnuts provide a gorgeous texture, and the sweet and tangy apple/honey dressing finishes this dish perfectly.

  • Ingredients
  • 1 cup candy cane beets, peeled and sliced very thin
  • 4 cups spinach, torn into bite sized pieces
  • 1/2 cup blue cheese, crumbled
  • 1/2 cup walnuts, chopped
  • Dressing
  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup apple juice
  • 1 tablespoon honey
  • Salt & pepper to taste

directions:

Mix the ingredients for the dressing and set aside to allow the flavors to develop. Assemble the salad and pour the dressing over the top just before serving.
