Seafood Paella
I created this dish when I was on the west coast, surrounded by fresh fish and seafood. Paella is an easy dish to make in general, but the addition of seafood gives it an elegance which transforms it from a quick mid-week meal into something sophisticated you can make when you are entertaining. I have chosen prawns, scallops and mussels but you can choose whichever you like to make your perfect paella. To further enhance this dish and I am using a flavored rice. If you don’t have any on hand, you can use regular short grain rice and add a pinch of salt.
- Ingredients
- 1 tablespoon olive oil
- 1/2 cup red pepper, diced
- 1/2 cup onion, diced
- 1 teaspoon thyme
- 1 teaspoon cracked black pepper
- 1 tablespoon smoked paprika
- 1 package Uncle Ben’s Garlic Butter flavored rice
- 3 1/2 cups of chicken stock
- 1/2 cup dry white wine
- 1 cup raw prawns, tails on
- 1 cup raw sea scallops
- 4 cups shelled mussels
- 1/4 cup parsley, chopped
- 1 lemon, sliced into wedges
directions:
Place the olive oil into a large skillet over medium heat. Add the red pepper and onion and stir. Saute for 5 minutes until tender. Add seasonings and cook for an additional minute, stirring to coat the veggies. Add the rice, stock and wine and bring it all to a boil. Cover and simmer for 10 minutes. Add the seafood and stir to incorporate into the rice mixture. Cook for 5 more minutes. The prawns should just be pink, the scallops opaque and the mussels opened (discard any that remain closed) Top with parsley and a squeeze of lemon. Serve hot.
