Mexican Salmon Salad

Salmon salad has been around for a while, and although I enjoy the traditional version which is usually just mixed with mayonnaise , it’s nice to mix things up every once in a while with a few new spices. This mexican style has chili powder and cumin and a squeeze of lime. To make it even more authentic, serve it with avocado slices and chopped cilantro.
- 1 cup canned salmon, drained
- 1/4 cup low fat mayo
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon lime juice
- Salt and pepper to taste
directions:
Place all the ingredients into a bowl and stir until combined. Serve as a sandwich filling, with crackers or as part of a salad with mixed greens.
