Greek Style Pork with Olives and Cherry Tomatoes

With very few ingredients, this meal has a nice rich flavor and hearty texture. The tomato/olive combination is savory, yet fresh. I recommend using Kalamata olives as they tend to be a little saltier however you can use whichever type you like. The sauce also pairs well with roasted chicken or fish.
