Spiced Apple Bran Muffins
These muffins and so moist and flavorful you forget how healthy they are. Not your average bran muffin, these fruit packed aromatic treats are full of protein, fiber and vitamins A & B12. Perfect morning fuel or afternoon pick me up.
- Ingredients
- 1 1/2 cups whole wheat flour
- 3/4 cup ground flax seed
- 3/4 cup oat bran
- 1/2 cup brown sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 1 cup apples, finely chopped
- 3/4 cup milk
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 2 tablespoons vegetable oil
Directions:
Preheat the oven to 400 degrees. Line a muffin tin with papers or non-stick cooking spray. Combine all the ingredients in a large bowl and pour into the muffin cups. Bake in the center of the oven for 20 minutes or until a toothpick inserted into the center of each muffin comes out clean.
