Artichoke & Cherry Tomato Skewers
I first time I made this dish it was for a holiday party and I wanted to create something festive with the colors of red and green. It turned out beautifully and now I make it year round. You can use canned artichokes packed in water or the jarred variety packed in oil. They taste equally good in this dish. The addition of the fresh basil leaves give the skewers a fresh taste alongside the cream dip.

A really yummy variation on this, if artichokes aren’t your thing – replace the artichokes with small bococcinni balls (can buy them in the deli area) and drizzle with oil and balsamic vinagre.
