You can vary this dish according to your taste, substituting different vegetables or omitting the cheese and it will still be tasty. However the “crust” which is formed when you broil it is what really makes it special. Use fresh parmesan for a stronger flavor.

So simple – but sounds so good! Zucchini is one of my favourite vegetables, but I never know what to make with them. Also the scallop recipe that you suggest pairing this with sounds delightful.
