Banana Oat Breakfast Cookies
These healthy cookies are great for breakfast or anytime you need to grab something healthy on the run. They have no added sugar or saturated fat and come together in minutes. I like to make a large batch and freeze them for quick snacks. I prefer to eat these cookies slightly chilled which enhances the fruity flavor.
- Ingredients
- 3 ripe bananas, mashed
- 2 cups large flake oats
- 1/2 cup applesauce
- 1 tablespoon vanilla extract
- 1 tablespoon ground flax
- 1/2 cup dried fruit (cherries, blueberries, apples, etc)
- 3 large dates, pits removed & chopped
directions
Preheat the oven to 350 degrees. In a large bowl, combine all the ingredients together and mix well. Drop rounded spoonfuls onto a cookie sheet lined with parchment paper. There should be enough batter to make 12-16 good sized cookies. Bake for 20 minutes. Cool completely.
