Blueberry Banana Muffins

This recipe pairs my Grandmother’s banana bread recipe with fresh blueberries to make these delicious muffins which everyone will love. If using frozen blueberries add them individually to each muffin cup before baking otherwise your batter will turn blue.

  • Ingredients
  • 2 1/4 cups flour
  • 3/4 teaspoons baking soda
  • 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup vanilla yogurt
  • 1/2 teaspoon vanilla extract
  • 2 very ripe bananas, mashed
  • 1 cup blueberries (fresh or frozen)

Directions:

Preheat oven to 350. In a large bowl combine all the dry ingredients and set aside. In a medium bowl beat the sugar and butter together until well blended. Then add the eggs and mix well. Next add the bananas, yogurt and vanilla and mix well. Pour into the large bowl of dry ingredients and combine until smooth. Add the blueberries and gently fold in. Spoon into muffin cups and bake for 15-20 minutes or until a toothpick inserted comes out clean.
