Blueberry Oatmeal Muffins with Flax

These deliciously healthy muffins are packed with the nutrition of whole wheat, oatmeal and flax. The addition of blueberries adds a sweet flavor and keeps the muffins moist while providing extra vitamins and antioxidants.

  • Ingredients:
  • 3 tablespoons melted butter
  • 2 eggs
  • 1 cup brown sugar
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 1/2 cups whole wheat flour
  • 1 cup oats
  • 1 tablespoon ground flax
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries

Directions:

Preheat the oven to 400 degrees. Line a muffin tin with papers or grease the tin with butter or margarine. In a large bowl, combine the flour, oats, flax, baking powder, baking soda and salt. Add the butter, eggs, sugar, milk and vanilla and stir to combine. Gently fold in the blueberries until just combined and spoon the batter into the muffin tin so that each one is 3/4 full. Place in the center of the oven and bake for 15 minutes. Allow to cool before serving.
