Caramelized Onion Soup
There are many varieties of traditional French Onion soup and most of them finish with a thick slice of bread and loads of melted cheese which makes this otherwise healthy, low fat soup into one laden with calories. I use very few ingredients but like to focus more on the caramelizing of the onions to get a rich flavour in the soup without all the fat! Adding a tiny bit of strong cheese at the end finishes it perfectly. This soup freezes and reheats well.
