I am all about shortcuts, which is why I love this recipe. If you are like me and have a bag of frozen chicken breasts in your freezer and are constantly looking for new ways to prepare them, this recipe is for you. Here I have made a fresh mango salsa but I have used store bought mango salsa in a pinch and it will work well. Just add chopped cilantro at the end for some fresh flavour.
