Chilled Mango Soup
Although not as common, chilled soups are lovely to serve on a summer day when you are craving something refreshing. I tend to find them a little light for an entrée but will often serve them as a first course. For this recipe, I recommend using fresh or canned mango as frozen tends to be a little pale in color and you want this soup to have a fresh look.
