Chocolate Peanut Butter Crepes

These incredibly decadent crepes look so beautiful and are sinfully delicious. I love the flavor of the chocolate crepe on its own, but with the addition of the peanut butter filling they become incredibly decadent. You can make them for breakfast or dessert.

  • Ingredients
  • Crepes
  • 1 tablespoon vegetable oil
  • 1 cup flour
  • 1/3 cup cocoa powder
  • 1/4 cup icing sugar (plus more for garnish)
  • 1 1/4 cups milk
  • 2 large eggs, beaten
  • 1 tablespoon butter, melted
  • 1 teaspoon vanilla extract
  • Filling
  • 1 cup Peanut Butter
  • 1 cup whipping cream
  • 1 cup icing sugar

 

Directions:

To make the batter, combine the flour, cocoa powder, icing sugar, milk, eggs, butter and vanilla in a large bowl. Whisk until a smooth batter is formed. In a separate bowl, beat together the peanut butter, icing sugar and whipping cream. Set aside. Place a little of the oil into a small skillet and using a paper towel, grease the pan. Place over a medium-low heat for 1 minute. Pour approx. 1 cup of the batter into the pan. Lift and swirl the batter around the pan until the bottom is completely covered. Return to the heat and cook for approx. 1 minute until set. Invert the pan and slide the crepe onto a plate. Cover to keep warm. Repeat the process with the rest of the batter. Once all the crepes are cooked, place each one on a plate and spread the peanut filling over 1/2 of each crepe. Fold in half and then over again into quarters. Repeat with remaining crepes. Garnish with chopped peanuts and additional chocolate if desired.
