Cucumber & Feta Cheese Salad

A friend of mine made this for me in the summer and I became addicted! This light salad has a surprisingly fresh flavor with so few ingredients due to the fresh herbs. If you are unable to find fresh dill and mint, you can substitute with whatever herbs are available to you. This recipe can also be made into a delicious salsa by cutting the ingredients into smaller pieces. For best results, assemble it just before serving to keep the cucumbers crisp.
- Ingredients:
- 1 1/2 cups English cucumber, chopped
- 1 cup red onion, finely chopped
- 1 cup feta cheese, crumbled
- 3 tablespoon fresh dill, minced
- 3 tablespoons fresh mint, minced
- Juice of 1 lemon
- Salt & Pepper to taste
directions:
Combine all ingredients and mix together. Allow to sit for 15-20 minutes to combine the flavors. Serve on its own as a salad or finely chop the ingredients and serve as an appetizer with tortilla chips or crackers.
